Wheat Free Wednesday: Recipe Edition

Smokey Salmon Cakes with Cream Sauce and Spinach Gratin 

Many of you requested the recipe when I posted a picture of this meal so I will kindly "give the people what they want!" But first, pictures. 

The Spinach Gratin recipe was in our Wheat Belly 30 Minutes (Or Less!) Cookbook that we'e been using religiously for the past few weeks. We still haven't found a recipe we didn't absolutely love. I highly recommend you get it!

Spinach Gratin

1 tablespoon extra-virgin olive oil

1/2 cup shredded Parmesan cheese, divided

1 pound fresh baby spinach           

1/4 teaspoon sea salt

1 tablespoon butter      

1/4 teaspoon ground black pepper

2 tablespoons cream cheese

6 tablespoons heavy cream

1/4 cup almond meal/flour (you can by this anywhere---Trader Joes, Walmart, Whole Foods, etc.)

Instructions:

Place an oven rack in the middle of the oven and preheat the broiler. Lightly grease a 1 1/2-quart baking dish.

In a large skillet over medium heat, heat the oil until hot. Cook the spinach, tossing occasionally with tongs, for 4 minutes, or just until wilted. Push the spinach toward the sides of the skillet. Add the butter, cream cheese, and cream to the center of the skillet and stir for 2 minutes, or until melted and hot. Add 1/4 cup of the Parmesan cheese, salt, and pepper. Stir the spinach and sauce together. Pour into the baking dish. 

In a small bowl, combine the almond meal/flour and the remaining 1/4 cup Parmesan. Sprinkle evenly over the spinach mixture. 

Broil for 3 minutes, or until the topping is browned and the spinach is bubbly.  

Eat it.

Whatever you do, make the sauce with the salmon cakes! They are independently delicious but when combined, oh.my.stars.
